Something New and Exciting!!!!!




 I have this rub that I have put together 
and if I do say so myself,
 it's pretty good.

I have given it to some people and they have tried it on many different things.

It's called

"Pip's Chicken Rub"

DIRECTIONS FOR PIP’S CHICKEN RUB

1.  Purchase a 4 ½ to 5-pound chicken.  (This size serves 4 to 5 people.)       
2. Preheat oven 350 degrees for a convection oven and 375 degrees for a conventional oven.
3.  Wash the chicken thoroughly and remove the inside parts.  Pat the chicken dry with paper towels.
4.  Place the chicken in a Pyrex dish.  (It is possible to cook two chickens at one time in a large Pyrex dish).  Sprinkle Pip’s Chicken Rub over the entire chicken, both inside and out.
5. Cover with foil that allows ventilation. Tent the foil.
6.  Place chicken in oven on the middle rack.  Baste chicken every hour as long as the chicken cooks.
7.  For one chicken, it takes approximately 2 hours to cook.  For two chickens it takes approximately 3 hours to cook.  The last 30 minutes of cooking, remove the foil to allow the chicken to lightly brown.  To test to see if chicken done, pull on a leg of the chicken—if done, there will be no resistance.
Hint:  For extra flavor, add 1 cup of chardonnay wine in the bottom of the Pyrex dish before you commence cooking.

I guess I can leave my own comment. I orignally made this because I love roast chicken. I bought one from the store and I said I could so a better job. It was not bad but i love a lot of flavor. I put together this combination of spices and I made it for several people and they loved it. I have used on pork chops, Cornish Hens, drummets, and our thanks giving turkey. I really think you will like it so give it a try.

This is our FAVORITE way to roast a chicken!!! I have just ordered a big supply--my husband was actually pouting when he realized that we had run out!

This is our "go to" dinner of choice--SO EASY and DELICIOUS!

I just used my rub on a turkey breast. I added a cup of white zinfandel to and chicken broth and it taste just fabulous.
